Pork Confit with Onion Marmalade.
Fringale is a relatively new restaurant in San Francisco and features the distinctive cooking of Gerald Hirigoyen. He was born in the Basque region of southwestern France and several dishes on the Fringale menu reflect this. Chef Hirigoyen’s entre is an interpretation of a french country classic – Pork Confit with Onion Marmalade.
